This rustic, free-form tart showcases whatever fruits are in season, wrapped in a flaky, golden crust that's surprisingly simple to make.

Mushroom Wellington

Ingredients

  • 2 pounds portobello mushrooms, cleaned and stems removed
  • 3 tablespoons olive oil
  • 1 large onion, finely diced
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1/2 cup walnuts, toasted and chopped
  • 2 tablespoons fresh thyme leaves
  • 1 sheet vegan puff pastry, thawed
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Brush mushrooms with 1 tablespoon olive oil and roast for 15 minutes. Set aside to cool.
  3. In a skillet, sauté onions in remaining oil until translucent. Add garlic and cook for 1 minute more.
  4. Add spinach and cook until wilted. Stir in walnuts and thyme. Season with salt and pepper.
  5. Roll out puff pastry on a floured surface. Place cooled mushrooms in the center and top with spinach mixture.
  6. Carefully fold pastry over filling, sealing edges with a fork.
  7. Bake for 30-35 minutes until golden brown.
  8. Let rest for 10 minutes before slicing and serving.

Rainbow Buddha Bowl

Ingredients

  • 1 cup cooked quinoa
  • 1 cup chickpeas, rinsed and drained
  • 1 cup shredded purple cabbage
  • 1 carrot, grated or spiralized
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 cup microgreens or sprouts
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 teaspoon maple syrup
  • Salt and pepper to taste

Instructions

  1. Arrange quinoa in the center of a serving bowl.
  2. Arrange vegetables, chickpeas, and avocado in sections around the quinoa.
  3. Top with microgreens or sprouts.
  4. Whisk together tahini, lemon juice, maple syrup, and 2-3 tablespoons of water to create a pourable dressing. Season with salt and pepper.
  5. Drizzle dressing over the bowl just before serving.

Seasonal Fruit Galette

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup cold vegan butter, cubed
  • 4-5 tablespoons ice water
  • 3 cups seasonal fruit (berries, stone fruit, apples, or pears)
  • 3 tablespoons sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest
  • 1 tablespoon plant-based milk for brushing
  • 1 tablespoon coarse sugar for sprinkling

Instructions

  1. Combine flour, salt, and sugar in a large bowl. Cut in vegan butter until mixture resembles coarse crumbs.
  2. Add ice water one tablespoon at a time, mixing until dough comes together. Form into a disk, wrap, and refrigerate for 1 hour.
  3. Preheat oven to 375°F (190°C).
  4. In a bowl, combine fruit, sugar, cornstarch, and lemon zest.
  5. Roll out dough on a floured surface to a 12-inch circle. Transfer to a parchment-lined baking sheet.
  6. Arrange fruit in the center, leaving a 2-inch border. Fold edges over fruit, pleating as you go.
  7. Brush crust with plant-based milk and sprinkle with coarse sugar.
  8. Bake for 35-40 minutes until crust is golden and filling is bubbly.
  9. Cool for 15 minutes before serving.
